The list of things I want to get done is expanding at an exponential rate. Learning and problem solving is so much fun.

And alas, even with careful pacing, it's not all doable.

Yesterday's batch of ice cream has turned out really well, I think I almost know how to do it.

Now having a go at lemon sorbet.

Ooohhhh...lemon sorbet! Manolo adores that. Let me know how you make that if you get good results, please?

It's finished churning, now in the freezer. Seems pretty good, if I may say so myself.

First up: sugar syrup: equal amounts sugar and water, overnight in the fridge with a vanilla bean in the jug.

Ingredients:
375 mls sugar syrup.
175 mls water
Juice of 4-5 lemons
Rind of 3 lemons (absolutely no white bits).
(this recipe also calls for 1 egg white when churning, I left this out).

Add the rind to 375 mls of sugar syrup and bring to the boil.

Let it cool.

Add strained lemon juice from 4-5 lemons, and the 175mls of water to the pot, and put it in the fridge overnight.

That's it...

I am pleased about your new foray into ice cream making! When the last local creamery went away in the late 90's, I was determined to be able to make my own (now we are again deluged with local creameries, thanks to the millennial comfort food craze, but never mind). We we bequeathed an Italian ice cream maker by some neighbors 14 years ago, and I no longer need to use a recipe. I call it my "superfood." What kind of maker do you use?

It's a good sign to want to do all the things. All the more of a bummer when we know we can't do all the things.
